Ingredients:
- 1 leg of lamb (around 2-3 kg)
- 4-5 cloves of garlic, minced
- 2 tbsp of olive oil
- 2 tbsp of dried rosemary
- Salt and pepper, to taste
- 4-5 large potatoes, peeled and cut into chunks
- 4-5 large carrots, peeled and cut into chunks
- 1 large onion, cut into wedges
- 2-3 tbsp of flour
- 2 cups of beef or vegetable broth
- 2 oven bags

Instructions:

1. Preheat your oven to 350°F (180°C).

2. In a small bowl, mix together the minced garlic, olive oil, dried rosemary, salt, and pepper.

3. Rub the mixture all over the leg of lamb, making sure to cover it completely.

4. In a large bowl, combine the potatoes, carrots, and onion wedges.

5. Sprinkle the flour over the vegetables and toss to coat.

6. Place one oven bag inside the other to create a double layer.

7. Place the vegetables into the inner oven bag and place the bag in a large roasting pan.

8. Place the leg of lamb on top of the vegetables.

9. Pour the beef or vegetable broth over the lamb and vegetables.

10. Close the oven bags tightly, making sure to leave enough space for the air to circulate.

11. Use a sharp knife to make a few small slits in the top of the bags.

12. Place the roasting pan in the preheated oven and roast for 2-2.5 hours, or until the internal temperature of the lamb reaches 145°F (63°C).

13. Remove the roasting pan from the oven and carefully open the oven bags.

14. Use a slotted spoon to transfer the vegetables to a serving dish.

15. Let the lamb rest for 10-15 minutes before carving.

16. Serve the roasted lamb with the vegetables and the pan juices. Enjoy!
